Here is a recipe from (((mysterre)))! Thank you myst!

Banana Oatmeal Cookies:

2 Cups rolled oats
1 Cup whole wheat flour
1/2 Cup unbleached or all purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 Cup very ripe bananas (2 large)
1 egg or 1/4 Cup liquid egg substitute
1/3 Cup packed brown sugar
2 Tablespoons canola oil
1/2 teaspoon vanilla extract
3/4 cup raisins

Preheat oven to 375 F. Spread the oats in a thin layer on a jelly roll pan. Bake, stirring occasionally, for 10 mins, or just until golden brown. Set aside to cool. Leave the oven turned on.

In a medium bowl, whisk together the ww flour, all purpose flour, baking powder, cinnamon & salt.

In a large bowl, combine the bananas, egg, brown sugar, oil & vanilla. Beat with an electric mixer on medium speed until smooth.

Beat in the flour mixture. Stir in oats & raisins.

Coat a baking sheet with cooking spray. Drop slightly rounded tablespoons of dough about 1" apart on the sheet. Bake for 12 - 14 mins, or until the bottoms are lightly browned around the edges. Remove to a wire rack and cool completely.

Makes 48 cookies

Per cookie: 50 calories, 1 g protein, 9 g carbohydrates, 1 g fat, 4 mg cholesterol, 1 g dietary fiber, 35 mg sodium.

Store cookies in a covered container at room temperature for up to 2 days. After that, refrigerate or freeze them.
