Leftover Easter Eggs

<b>Scotch Eggs</b>

1 egg, uncooked
1 cup breadcrumbs
salt and pepper
1 1/2 lb. bulk sausage
pinch of nutmeg
8 hard-cooked eggs, peeled
oil for frying

Season sausage with salt, pepper, and nutmeg. Cover each egg completely with sausage, molding with your hands. Roll sausage in beaten egg, then in breadcrumbs, pressing crumbs firmly into the meat. Brown in hot oil until golden. You can also bake these--45 min. at 375?

<b>Creamed Eggs</b>

6 hard-cooked eggs, peeled and sliced
3 T butter
1 cup milk
3 T flour
salt and pepper
hot biscuits

Melt butter in saucepan, add milk, gradually whisk in flour. Stir and cook until thickened. Season with salt and pepper, and gently stir in sliced eggs. Serve over biscuits.
