I agree, PBS. The baked kind is the absolute best. Had the Velveeta and shells a few weeks ago. My late hubby and I used to go to a small restaurant nearby that served just plain homecooked food. They had absolutely wonderful mac and cheese. Funny thing, though...You could always tell which cook had made the mac and cheese on any given day, since each one added their own minor twist to it.
