Does anyone have a recipe for nutritious, low-fat muffins like the VitaMuffins that they sell in the grocery store? They're delicious and only 100 calories for half, but they are very expensive!

Well FitChik, I can see about maybe finding a recipe for you. I hope that would help. Never heard of the VitaMuffins you are talking about. Maybe that is only for your location or general area. I would like to try some myself. I will see if I can find you a recipe though.

![]() Have a great day! ![]() Summer Pasta Salad by DLC55 Ingredients: 1 Box Pasta- I like using the green, red and yellow spiral 1 green Pepper- chopped 1/2 onion-chopped 1 Tomato- chopped 1 small jar low fat Miracle Whip Directions: Cook pasta until done. Rinse with cold water. Add chopped up vegies and 1/2 jar Miracle Whip. Mix well adding the rest of the Miracle whip as needed. Let stand over night in fridge and mix in more Miracle Whip if needed. Chicken Quesedillas INGREDIENTS 1 package of flour torillas 1 package of Tyson chicken strips for quesedillas 1 bag of low fat or fat free shreeded cheddar cheese 1 jar of salsa 1 bag of low fat or fat free shreaded cheddar cheese DIRECTIONS Stir fry chicken until done spread salsa on one tortilla, add chicken and shredded cheese top with another tortilla and place in preheated skillet cook over medium heat turning once to brown both sides and melt cheese cut with pizza cutter and serve with sour cream, gucamole, and salsa. Take your skinless boneless chicken breasts and top with salsa, wrap in reynolds wrap and bake in oven or on grill until done Banana Surprise By DLC55 INGREDIENTS: 1 Banana Wheat Germ Cinnamon Grape nuts cereal (crushed) Reduced far Jiff Peanut Butter Directions: Take one large banana Mix together some Wheat Germ, cinnamon and grape nuts cereal crushed. Spread peanut butter on banana then honey and roll in mixture. Place in fridge until next morning and eat it * use reduced fat Jif The following recipes are from this website: http://allrecipes.com Tuna Confetti Salad INGREDIENTS 2 (6 ounce) cans tuna, drained 2 tablespoons mayonnaise 2 tablespoons diced green bell pepper 2 tablespoons diced red bell pepper 1 tablespoon red onion, diced 1 tablespoon thinly sliced green onion 1 clove garlic, minced 1/2 teaspoon chopped fresh parsley 1 teaspoon rice wine vinegar 1/2 teaspoon lemon juice 7 drops hot pepper sauce salt and pepper to taste DIRECTIONS In a mixing bowl, combine the tuna, mayonnaise, bell peppers, red onion, green onion, garlic, parsley, vinegar, lemon juice, hot pepper sauce and salt and pepper. Stir well and refrigerate for at least one hour. Almond Butter by Amy Medeiros INGREDIENTS 1 cup toasted almonds 2 teaspoons olive oil DIRECTIONS Place the almonds in a food processor. Process on high until ground almonds begin to form a ball. Drizzle olive oil over almonds and continue to process, stopping occasionally to scrape sides of the bowl with a spatula as needed. Store in an airtight container. Un-Tofu Tofu Smoothie SUBMITTED BY: SUPERWOMYN INGREDIENTS 1/3 (10.75 ounce) package dessert tofu 3 frozen strawberries 5 frozen peach slices 1 (8 ounce) container strawberry yogurt 1 cup orange juice DIRECTIONS In a blender, combine tofu, strawberries, peach slices, yogurt and orange juice. Blend until smooth. Tofu and Rice Stuffed Peppers SUBMITTED BY: N1COLE INGREDIENTS 1 cup uncooked brown rice 2 cups water 2 tablespoons olive oil 1 clove garlic, minced 1 (12 ounce) package extra-firm tofu, drained and diced 1 3/4 cups marinara sauce, divided salt to taste ground black pepper to taste 2 red bell peppers, halved and seeded 2 orange bell peppers, halved and seeded 2 cups shredded mozzarella cheese 8 slices tomato DIRECTIONS Place rice and water in a pot and bring to a boil. Cover, reduce heat to low, and simmer 45 minutes, or until tender. Heat the olive oil in a skillet over medium heat, and stir in garlic and tofu. Cook about 5 minutes. Mix in 1/4 cup marinara sauce, season with salt and pepper, and continue to cook and stir until tofu is evenly brown. Preheat oven to 350 degrees F (175 degrees C). Using a wooden spoon or spatula, press an equal amount of rice into each pepper half. Layer rice with remaining marinara sauce, and 1/2 the cheese. Press equal amounts of tofu into the pepper halves. Place 1 tomato slice on each pepper, and top peppers with remaining mozzarella. Arrange stuffed peppers in a baking dish. Bake 25 minutes in the preheated oven, until cheese is melted. Serve 1/2 of each color pepper to each person. Quick and Easy 20-Minute Chicken Posole SUBMITTED BY: Veronica Oyama INGREDIENTS 1 tablespoon olive oil 1 large onion, thinly sliced 2 cloves garlic, minced 2 teaspoons dried oregano 1/2 teaspoon ground cumin 2 (14.5 ounce) cans chicken broth 1 (15 ounce) can white hominy 1 (7 ounce) can chopped green chile peppers, drained 1 (2 ounce) can sliced black olives, drained 3/4 pound skinless, boneless chicken breast meat - cut into cubes DIRECTIONS In a large pot over medium heat, combine oil, onion, garlic, oregano and cumin. Cook, covered, 5 minutes, until onions are tender. Stir in broth, hominy, chile peppers and olives. Bring to a boil, then reduce heat to medium. Stir chicken into pot. Cover and cook until chicken is no longer pink, 5 to 10 minutes.

We made Sloppy Joes with turkey tonight and it was really good!
Makes 2: 8 ounces ground turkey chopped onion and green pepper- as much as you want in it 4 fluid ounces tomato sauce 1 teaspoon worchestershire sauce 2 tablespoons ketsup Brown turkey until done and drain. Mix in the rest of the ingredients and mix well over medium heat for about 10-15 minutes. Serve hot on hamburger bun. |
