Strawberry Cheesecake Smoothie

1/2 cup cottage cheese
1/2 cup milk
1 cup frozen strawberries
Sweetener of your choice

Put the cottage cheese, milk, and sweetener in the blender for about 30 seconds, then drop the strawberries in a couple at a time until the whole thing is blended up like a milkshake.

I use 1% fat cottage cheese, skim milk, and Splenda to make mine and this is the nutritional information for that:

Calories: 176.4
Total Fat: 1.5 g
Cholesterol: 7.0 mg
Sodium: 525.5 mg
Total Carbs: 27.6 g
Dietary Fiber: 3.1 g
Protein: 18.8 g

Here's something that's a little different then your average dessert. It's from the Safeway summer site. Hope you enjoy this


Grilled Banana Splits

* 12 large firm-ripe bananas, unpeeled, skins washed with detergent before using to remove residue
* 3 bars (4 oz. each) milk chocolate, broken into small pieces
* 1 tbsp. Safeway Cinnamon
* 3 pt. of your favorite Safeway SELECT? Ice Cream
* 3 cups Lucerne? Whipping Cream, lightly sweetened to taste and whipped (optional)
* 3/4 cup chopped toasted walnuts (optional)
* 12 Safeway Maraschino Cherries (optional)

1. Prepare a gas or charcoal grill for direct, medium-high heat (you can hold your
hand 1 to 2 in. above the cooking grate only 2 to 3 seconds;
visit our Grilling Essential section for complete instructions).

2. While grill heats, cut into each unpeeled banana lengthwise, making a deep
slit but taking care to avoid cutting all the way through.
Slip pieces of chocolate into each pocket and sprinkle with
some of the cinnamon. Wrap each banana in foil.

3. Lay bananas on cooking grate; cover gas grill.
Cook, turning once, until soft when squeezed with tongs, about 10 minutes.
Lift bananas onto a platter.

4. Carefully unwrap each banana and place on a plate with the cut side facing up.
Top each with small scoops of ice cream; add a dollop of whipped
cream, a sprinkling of walnuts, and a cherry, if you like.

Ooh, so many good recipes so far! Here's mine for peanut butter pie.

Peanut Butter Pie
1/2 C smooth peanut butter
1/2 C confectioner's sugar (10X)
8 ounce block of cream cheese (1/3 less fat can be used, but DON'T use fat free)
8 ounce tub of cool whip (fat free okay here)
graham cracker crust

Place peanut butter, sugar, cream cheese and cool whip in bowl and beat until smooth (about 1 minute). Place into crust and refrigerate or freeze for 1 hour. Share.

My coworkers made Grilled Pineapples with Ice Cream also from safeway.com/summer. We have other unique recipes like Lemon-Kissed Cherries with Sorbet.

Salad dressing doesn't have to be used for just salads. The weather is getting cooler and it is time for soup. Here is our recipe for Hearty Italian Chicken Chowder. Enjoy!

1/4 cup KRAFT Light Zesty Italian Dressing
1/2 lb. boneless skinless chicken breasts, chopped
1 can (14-1/2 oz.) stewed tomatoes, undrained
1 cup fat-free reduced-sodium chicken broth
1 zucchini, chopped
1/2 cup elbow macaroni, uncooked
1 tsp. dried basil leaves
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese

HEAT dressing in large saucepan on medium heat. Add chicken; cook 3 min., stirring once.

ADD tomatoes, broth, zucchini, macaroni and basil. Bring to boil on high heat.

SIMMER on medium heat 8 min. or until macaroni is tender. Sprinkle with cheese.

Tips: You can use whole wheat elbow macaroni as an easy way to add fiber in this recipe.
You can also use 2 cups broccoli florets for the zucchini.
