Okay...I will be here tonight to start posting the recipes I've been promising. I'm busier than I can tell ya and I really am sorry for taking so long!! BAD SHADOW BAD!

In the meantime, the theme for next week is gonna be...

Will we be wearing those old Playboy Bunny outfits, Shadow? I hate trying to cook in those, ya know!

OMG....I somehow missed a BUNCH of posts....forgive me and forgive me one more time if I miss thanking anyone for participating here. (((antiana,PeasWOW,anniejoanthetastetester,biker,Lou,DLC,Terri and Shadow)))

I'm so sorry I missed them because I truly get a kick out of seeing you all coming in and supporting Shadow and Moon. We NEED help, that's for sure!

LOL...well it turned out to be NO picnic last night....but it worked and our goal was to get everyone over to the new kitchen BEFORE it's *destroyed*! <g> Next week we'll settle in to our regular COOKING session, so bring a recipe for us please. We are doing some cajun cooking next Monday, but we like variety, so bring anything you'd like.

JUST BRING!

Leftover Easter Eggs

<b>Scotch Eggs</b>

1 egg, uncooked
1 cup breadcrumbs
salt and pepper
1 1/2 lb. bulk sausage
pinch of nutmeg
8 hard-cooked eggs, peeled
oil for frying

Season sausage with salt, pepper, and nutmeg. Cover each egg completely with sausage, molding with your hands. Roll sausage in beaten egg, then in breadcrumbs, pressing crumbs firmly into the meat. Brown in hot oil until golden. You can also bake these--45 min. at 375?

<b>Creamed Eggs</b>

6 hard-cooked eggs, peeled and sliced
3 T butter
1 cup milk
3 T flour
salt and pepper
hot biscuits

Melt butter in saucepan, add milk, gradually whisk in flour. Stir and cook until thickened. Season with salt and pepper, and gently stir in sliced eggs. Serve over biscuits.

Okay I've been asked to post this and since I have this deep abiding desire to keep everyone happy, here goes <g>

Chex Party Mix

6 Tbs butter or margaine
1 tps seasoned salt
4 tsps. Worcestershire sauce
2 cups Corn Chex
2 cups Rice Chex
2 cups Wheat Chex
3/4 cup salted peanuts.

I also throw in 2 cups of pretzel sticks

Preheat oven to 250 degrees. Heat butter in 13 x 9-inch baking pan in oven until melted. Remove. Stir in seasoned salt and Worcestershire sauce. Add Chex and nuts and pretzels (if used). Mix until all pirces are coated. Heat in oven 45 minutes. Stir every 15 minutes. Spread on absorbent paper to cool. Makes 6 and 3/4 cups.

Note: Party Mix may be frozen, so make a double batch. Thaw at room temperature in container in which it was stored.

Tho' in fact, I adore salads.

I have a technical question for y'all - what goes into the thing that is called "French Dressing" over there in the US? (It looks so very different from what is called French Dressing over here in the UK that I'm kinda curious).

Unlike me to want to do a search on such things <g>, but here you go!

Basic French Dressing

1 c Oil
1/4 c Wine vinegar
3 tb Water
2 1/2 ts Sugar
1 ts Dry mustard
1/2 ts MSG (optional)
1 ts Black pepper
2 1/2 ts Salt
1 1/4 ts Worcestershire sauce
1 1/4 ts Hungarian paprika
1 ts Grated onion
2 oz Blue cheese (optional)


Combine oil, vinegar and water and beat until blended. Add sugar, mustard, MSG, pepper, salt, Worcestershire and paprika and beat until blended. Add onion and beat well. If desired, stir in cheese.

Makes 1 3/4 cups

I thought French dressing had ketchup in it....hmmm


Anybody know how to make "green chili"??

I have found the stuff while on vacation and want to make it at home..

and haven't a clue how to do it....

Here's a few recipes:

Mom's Tomatillo Green Chili

What You'll Need :

1/2 pound pork, chopped
1 tablespoon cooking oil
7 tomatillos husked, washed, and chopped
1 can tomatoes, chopped
1 can chicken broth
2 cloves garlic, smashed and chopped
1 tablespoon celery, finely chopped
4 oz green chiles, diced (one small can)
3/4 cup shredded cheddar cheese
2 cups shredded lettuce
4 flour tortillas
1 cup rice (jasmine)
1/2 ts chili powder
2 cups water
1 tablespoon butter
1/2 Ts salt


What To Do :

Quickly brown pork in hot oil.
Add 1 can chicken broth, the tomatillas, tomatoes, garlic and celery.
Bring to boil then turn down, cover and simmer for about 40 minutes.
Add the chopped chilies and continue simmering for another 20 minutes.
Since the rice takes about 20 minutes to cook you should begin it now.

Rice:
1 cup jasmine rice
1/2 tsp chili powder
2 cups water
1 Tbspn butter
1/4 tspn salt

Place 2 cups of cold water in a sauce pan. Add 1 cup of jasmine rice, 1Tbspn butter and 1/4 tspn salt.
Bring to a boil, reduce heat to simmer, place lid on pan and simmer for about 20 minutes.
This is nice unsticky rice.
Warm tortillas and roll up.

To serve: Place 1/2-3/4 cup rice on plate, spoon green chili sauce over rice, sprinkle with shredded lettuce and cheese. Place a tortilla on the side.

EASY GREEN CHILI

INGREDIENTS
? pound beef stew meat
1 16-ounce can hominy or one
12-ounce can whole kernel corn, drained
1 14?-ounce can tomatoes, cut up
1 large onion, chopped
1 4-ounce can diced green chili peppers, drained
? cup water
1 teaspoon dried oregano, crushed
1 teaspoon instant beef bouillon granules
2 cloves garlic, minced
1 16-ounce can red kidney beans or pinto beans,
heated and drained


DIRECTIONS
Trim separable fat from stew meat, then cut into ? -inch pieces.

In 3-quart saucepan stir together meat, hominy or corn, undrained tomatoes, onion, chili peppers, water, oregano, bouillon granules, and garlic. Heat to boiling. Reduce heat. Cover and simmer about 1? hours or till meat is tender. To serve, ladle mixture into individual bowls and top with hot kidney or pinto beans.

Makes 4 servings.

Cooking Time: 1? hrs.
